Air fryer hamburgers: the dimple matters more here than it does in a pan
Two 170g patties take 12 minutes at 375°F (190°C), flipped once, and they need to reach 160°F (71°C) right through. The instruction people skip is the dimple, and it is worth knowing what it is actually for. A patty domes because meat shrinks as it cooks, and it does so in stages: the muscle fibres contract across their width from around 95°F, then along their length from around 130°F, and the connective tissue between them tightens hard from about 140°F. All of that pulls the sides and the base of the patty inward. The meat has to go somewhere, so the middle rises. A dimple is not a decoration - it is a quarter-inch of material taken out in advance from the exact spot the patty is about to push upward, so it finishes flat instead of spherical.
What almost nobody says is that this matters more when you cook hamburgers in the air fryer than when you cook them in a pan, and the reason is which parts of the patty are hot. On a stovetop only the base is against the heat - the rim is standing in room-temperature air and the top stays barely warm until you turn it, so the contraction starts underneath and works its way up, slowly and unevenly. In a basket the patty sits in a 375°F airstream on both faces and right around the edge at once, so the whole circumference reaches collagen's contracting range at roughly the same moment and squeezes inward from every direction together. That is the geometry that gives you a dome rather than a disc. It is also why a patty that behaves itself on the hob will puff up in here, and why this page presses the point harder than a stovetop recipe needs to.
The trade the basket makes is the reverse of the one it makes on steak. A steak wants contact with hot metal, and losing that contact costs it the crust, which is why the steak page sends you to a pan at the end. A burger made from decently fatty ground beef renders a great deal of liquid fat, and in a pan that fat has nowhere to drain to: it pools, the patty sits in it, and the underside is effectively shallow-fried in beef dripping. Here it falls straight through the perforations into the drawer below. You give up the hard sear and you get an evenly coloured patty that is not greasy - on this particular food, a fair swap.

No, and this is the one place on this page where guessing carries a real cost. USDA testing has found colour to be unreliable in both directions. In one direction the patty browns too early: a Kansas State study found more than a quarter of fresh ground beef patties had gone brown inside before they reached the safe 160°F (71°C), and some looked thoroughly well done at around 131°F. That is the dangerous case, because a burger that looks cooked is the one you stop cooking. In the other direction, lean beef can stay visibly pink well above 160°F and be completely safe to eat. The colour comes from myoglobin, the pigment in the muscle, and how early it turns depends on the meat's acidity and on whether it has been frozen and thawed - neither of which you can see by looking. So the pink is not telling you about the temperature, it is telling you about the beef. Slide a thermometer into the thickest part of the patty from the side and cook to 160°F whatever the inside looks like. This matters more for burgers than for steak because grinding mixes what was the surface of the meat all through the middle, so a burger has to be safe the whole way through in a way a whole cut does not.
