Is a convection oven the same as an air fryer?

In principle, yes - and it is worth being blunt about that, because most articles hedge. Both appliances work the same way: an element heats the air, a fan moves it, and dry heat browns the food. There is no third mechanism hiding inside an air fryer. No infrared trick, no pressure, nothing microwave about it. Put the same fries in both at the same temperature and they cook by exactly the same physics.

So the question of which one is "better" is not really a question about technology. It comes down to four physical facts: how big the chamber is, how fast the air is moving where the food actually sits, whether that air can get underneath, and how much metal has to be heated before cooking can start. Notice that not one of those is a difference in kind. They are all differences in degree - and the third row is the one that does the most work, even though it is the one nobody mentions.

Why the air fryer crisps better

Here is the part the appliance-brand blogs never get to. Once you understand it, every other difference on this page stops needing to be memorized.

Any food sitting in an oven carries a thin film of nearly-stationary air against its surface. Food is wet, so that film fills up with water vapor steaming off the food, and it insulates. Heat has to cross it to get in, and moisture has to diffuse out through it before the surface can dry. And the surface has to dry before it can brown at all: while it is still wet, evaporation pins it at around 212°F (100°C), and the Maillard reaction that browns and flavors food does not really get going until about 285°F (140°C). A wet surface cannot brown. It can only steam.

Fast-moving air scrubs that film away. That is the whole trick, and it is the only thing an air fryer does that a convection oven does not do as well. The fan sits inches from the food rather than behind a baffle at the back of a big cavity, and it is pushing air through a far smaller space, so the air speed at the surface of your fries is much higher. The vapor film is stripped off as fast as it forms, the surface dries in a couple of minutes instead of ten, and everything after that - the color, the crunch, the flavor - follows from that.

Two consequences are worth spelling out, because between them they explain most air fryer disappointments:

None of these are consolation prizes. They are physical, and no air fryer is going to engineer its way past them.

What about the "Air Fry" button on my convection oven?

It is a real feature, not just a sticker on the dial. On most ranges and wall ovens the air fry setting runs the convection fan at its highest speed, and the manufacturer supplies a perforated basket or a mesh tray to use with it. That tray is the important half of it: it is the sheet-pan problem, solved. Air gets under the food, and the difference in the result is immediate.

What it cannot fix is the cavity. You are still bringing five cubic feet up to temperature, so there is no three-minute start, and the fan is still at the back rather than inches above the food, so the air speed where it matters is lower than a basket gets. Expect a clear step up from plain convection and a small step down from a dedicated air fryer. Use the top rack, where the airflow is fastest, and do not stack the trays.

If your oven has the button and came with a mesh tray, use it. It gets you most of the way there and it takes up no counter space at all.

Air fryer vs a conventional oven

Worth separating, because "oven" means two quite different machines. A conventional oven has no fan at all - just elements, and whatever drift the hot air manages on its own. That puts it much further from an air fryer than a convection oven is, which is why the conversion you have to apply is twice as large.

Converting recipes between them

Because they cook the same way, convection recipes move across almost unchanged. Drop the temperature by about 10°F (5°C) and trim roughly 10% off the time, then check a couple of minutes early. Coming from a conventional oven the gap is bigger, so it is the standard 25°F and 20%. Going the other way - an air fryer recipe into a convection oven - add the temperature back, allow a little longer, and flip the food halfway, because now it is sitting on a solid pan.

The trap to avoid

Many convection ovens quietly subtract about 25°F for you the moment you press the convection button. If yours does, work from the number showing on the display, not the number printed in the recipe - otherwise you reduce twice and the food comes out underdone.

So which should you buy?

If you already have a convection oven, you do not need an air fryer - you can already do the job, and if your oven has an air fry mode and a mesh tray you can do most of it well. Buy one anyway if you cook mostly for one or two, reheat a lot of leftovers, or eat a lot of frozen food: the three-minute preheat and the basket turn those from a chore into a two-minute decision, and that is the difference between owning the appliance and using it.

If you are choosing between the two as your only appliance, buy the oven. Capacity is the one thing you cannot work around.

Is an air fryer just a convection oven?

Yes, in every way that matters. Both cook by blowing hot, dry air over food with a fan - there is no extra mechanism hiding inside an air fryer. It is a convection oven built small, with a faster fan sitting much closer to the food and a perforated basket instead of a solid pan.

Is an air fryer faster than a convection oven?

Yes, on both counts. It preheats in 2-3 minutes against 10-15 for an oven cavity, because there is almost no metal or air to bring up to temperature. And once it is going, the faster airflow cooks most foods roughly 10% quicker than a convection oven at the same temperature.

Why does food get crispier in an air fryer than in a convection oven?

Two reasons, and neither is a setting you can change. The faster air strips away the film of water vapor clinging to the food, so the surface dries and starts browning sooner. And the perforated basket lets air reach the underside, whereas in a convection oven the food sits on a solid pan and its base steams rather than crisps.

Does an air fryer use less electricity than a convection oven?

For one or two portions, yes - it is heating a few quarts of air rather than a whole cavity, and it runs for less time. The crossover comes at about one basket-load. Once you need more than a single layer, the air fryer has to run several batches and the oven does it in one, so the oven becomes the cheaper option.

Is the air fry setting on my oven as good as a real air fryer?

Close, but not identical. It typically runs the convection fan at full speed and comes with a perforated tray, which solves the soggy-bottom problem. But you are still preheating a full-size cavity, and the fan is still at the back rather than inches from the food, so air speed at the surface is lower. Use the top rack, where the airflow is fastest.

Do I need an air fryer if I already have a convection oven?

Not really - you can already do the job. Buy one if you mostly cook for one or two, reheat a lot of leftovers, or eat a lot of frozen food, because the 2-3 minute preheat and the basket make those genuinely better and quicker. If you regularly cook for four or more, the oven is still the appliance you will reach for.

Which is better for frozen food, an air fryer or a convection oven?

The air fryer, clearly, and it is the gap where it wins by most. Frozen fries and nuggets are already par-fried and carry a layer of surface ice, so they need heat driven hard at a wet surface. The basket does exactly that, from every side at once, with no oil and no flipping.
