Zucchini goes to mush in the oven for me every single time, all that water, but the air fryer's direct heat dries it off and browns the edges instead. The trick I've found is not to crowd the basket, so the steam can actually escape.

How to air fry zucchini

  1. Preheat your air fryer to 375°F (190°C).
  2. Add the fresh zucchini to the basket. Keep the coins in a single layer.
  3. Cook for about 10 minutes, flipping or shaking halfway through.

Pro tip

Slice into coins for even cooking.

How to tell when it's done

It's ready when the slices are tender and golden at the edges but still holding their shape. I get it out promptly - left too long it goes soft and floppy.

Converting from an oven recipe

If your recipe is written for a conventional oven, lower the temperature by about 25°F (15°C) and reduce the time by roughly 20% to land near 375°F for 10 minutes. Need a different starting point? Use the conversion calculator.

A 2-3 minute preheat gives the most accurate timing and the best browning, but it isn't essential - if you skip it, add a minute or two to the cook time.
