How a gas oven compares to an air fryer

A gas oven heats by burning gas, and that flame does two things worth knowing about. It tends to create hot spots and an uneven temperature from shelf to shelf, which is why gas-oven cooks learn to rotate trays partway through. It also releases a little moisture as the gas burns, so the air inside a gas oven is slightly damper than the bone-dry heat of an air fryer. Food in a gas oven therefore browns more slowly and stays a touch softer on the outside than the same food will in an air fryer.

Because of that, the standard conversion works well: drop the temperature by about 25°F (15°C) and cut the time by roughly 20%. The one thing to expect is faster browning - the air fryer's dry, fan-driven heat crisps and colors food noticeably quicker than your gas oven does, so check early the first time and pull things out as soon as they look right rather than waiting for the timer. If you cook from gas marks, convert the gas mark to a Celsius or Fahrenheit figure first, then apply the same reduction.
