A cutlet isn't a cut you buy - it's a chicken breast halved through the middle and beaten flat, and the flattening is the whole recipe. An even half-inch cooks through in twelve minutes, so the outside browns and the middle hits temperature at roughly the same moment, which is exactly what a whole breast can't do. The air fryer then beats both the skillet and the oven on the same point: the basket is perforated, so the underside meets moving air instead of sitting in oil or in its own steam on a sheet pan, and both faces crisp at once.
Ingredients
Quantities for 4 cutlets (450g) - the times on this page assume that much in the basket.
- 2 boneless, skinless chicken breasts (450g), halved into 4 cutlets
- 1/4 cup plain flour
- 1 egg, beaten
- 3/4 cup panko breadcrumbs
- 1/4 cup grated parmesan, mixed into the panko
- 1/2 tsp garlic powder
- Salt and black pepper
- Oil spray, for both sides of the breading
- Lemon wedges, to serve
How to air fry chicken cutlets
- Lay each breast flat, hand on top, and slice it horizontally into two thin halves. Put them between two sheets of plastic wrap and beat them to an even half-inch (1cm) with a rolling pin, working from the middle outwards - you are levelling them, not tenderising them. Set out three shallow bowls: flour seasoned with salt and pepper, the beaten egg, and the panko mixed with the parmesan and garlic powder. Take each cutlet through them in that order, pressing the crumbs on firmly, then spray both sides with oil until no floury patches remain.
- Preheat the air fryer to 400°F (200°C).
- Add the fresh chicken cutlets to the basket. Lay them flat in a single layer - where two cutlets overlap, the breading steams and stays pale.
- Cook for about 12 minutes, flipping them over halfway through.
- Check it has reached a safe internal temperature of 165°F (74°C) before serving.
Pro tip
Spray the breading until no floury white patches are left. Dry crumbs cannot brown - they just come out raw-tasting and chalky.
How to tell when it's done
The breading should be deep golden and firm - tap it and it clicks rather than gives. Check 165°F (74°C) at the thickest point, but check it early: a half-inch cutlet climbs through the last twenty degrees in about a minute, so start testing at ten minutes rather than trusting the timer. If the crumb is pale in patches, that's oil you didn't spray on, not time you still owe.
Safe internal temperature
Cook to 165°F (74°C) at the thickest point. An instant-read thermometer is the only reliable way to confirm it.
Converting from an oven recipe
If your recipe is written for a conventional oven, lower the temperature by about 25°F (15°C) and reduce the time by roughly 20% to land near 400°F for 12 minutes. Need a different starting point? Use the conversion calculator.
Air fryer chicken cutlets: FAQ
Can you use store-bought chicken cutlets in an air fryer?
Yes - and it saves the slicing, though the breading is still most of the fifteen minutes of prep on this page. The catch is that the pack has done the halving and skipped the levelling. It is the same wedge our chicken breast page deals with: a breast is thick at the shoulder and tapers almost to a point, so slicing one horizontally leaves you two thinner copies of that taper rather than two even slabs. Packs often run from about half an inch at the fat end down to a quarter at the tip. The breading then hides it, because a crumb coat is the same thickness all over and browns evenly across meat that is not - so a cutlet can look finished everywhere while only the thin end is. Give the fat end a few taps with a rolling pin until the whole thing is an even half-inch, and the 400°F (200°C) for 12 minutes on this page holds. If the pack is thinner than that, start checking nearer eight minutes, and let 165°F (74°C) at the thickest point settle it either way.
How long does it take to air fry chicken cutlets?
Air fry chicken cutlets at 400°F (200°C) for about 12 minutes, flipping them over halfway through. That's for 4 cutlets (450g) in a single layer; adjust slightly for a fuller basket or a different model.
What temperature do you air fry chicken cutlets at?
Set the air fryer to 400°F (200°C). If you're converting an oven recipe, that's roughly 25°F (15°C) below the oven temperature, with the time cut by about 20%.
Do I need to preheat the air fryer for chicken cutlets?
A 2-3 minute preheat gives the most accurate timing and the best browning, but it isn't essential - if you skip it, add a minute or two to the cook time.
What's the safe internal temperature for chicken cutlets?
Cook chicken cutlets to a safe internal temperature of 165°F (74°C), measured at the thickest point with an instant-read thermometer. Cooking time is a guide; internal temperature is what confirms it's safely done.
