Cubed potatoes are the fast one: no parboiling, no pan on the stove, just an even dice straight into the basket. They come out crisp at the corners and fluffy inside in about twenty minutes, which makes them a weekday side or a breakfast potato rather than a Sunday roast.

Ingredients

Quantities for 1 lb (450g) potatoes, cubed - the times on this page assume that much in the basket.

How to air fry cubed potatoes

  1. Peel the potatoes and cut them into even 1-inch cubes - uneven ones finish at different times - then pat them properly dry and toss with the oil, rosemary, garlic powder, flaky salt and pepper.
  2. Preheat the air fryer to 380°F (195°C).
  3. Add the fresh cubed potatoes to the basket. Shake every 5 minutes.
  4. Cook for about 20 minutes, shaking the basket every 5 minutes.

Pro tip

Dry the cubes thoroughly after cutting - a wet surface pins itself near 212°F and cannot brown until the water is gone.

How to tell when it's done

Look for deep golden, crisp edges and a piece that crushes easily against the side of a fork. A couple of shakes makes sure every side browns, not just the bottoms.

Converting from an oven recipe

If your recipe is written for a conventional oven, lower the temperature by about 25°F (15°C) and reduce the time by roughly 20% to land near 380°F for 20 minutes. Need a different starting point? Use the conversion calculator.

Do I need to preheat the air fryer for cubed potatoes?

A 2-3 minute preheat gives the most accurate timing and the best browning, but it isn't essential - if you skip it, add a minute or two to the cook time.
