These have become my shortcut roast potatoes for when I can't be bothered with a whole tray in the oven. A little oil and seasoning, and they come out crisp at the edges and fluffy inside with barely any fuss.
How to air fry cubed potatoes
- Preheat your air fryer to 380°F (195°C).
- Add the fresh cubed potatoes to the basket. Shake every 5 minutes.
- Cook for about 20 minutes, flipping or shaking halfway through.

How to tell when it's done
I look for deep golden, crisp edges and a piece that crushes easily with a fork. A couple of shakes makes sure every side browns, not just the bottoms.
