The reason fresh sweet potato fries fight you is not really the water, though the water gets all the blame. Sweet potato carries more sugar and markedly less starch than a russet - roughly 21% of its carbohydrate is sugar against a russet's 3%, and 64% starch against 89% - and starch is what a crust is built from. That much is on every recipe page. What those pages leave out is that the number is not fixed while you cook: sweet potato contains beta-amylase, an enzyme that cuts starch into maltose, and it does its best work between about 140°F and 158°F, only giving up above roughly 167°F. Every fry climbs through that window on its way to done. So the vegetable spends the first minutes of the cook converting the very thing you need for a crust into the very thing that burns before a crust can form, and it does more of it the longer it lingers there.

Which is why the frozen bag wins, and why the reason is not the one you would guess. Commercial fries are par-fried before freezing, and par-frying takes the surface past that 167°F cutoff in seconds - the enzyme is denatured at the factory, before it has had time to do much. Then a starch coating goes on from the outside, and a dusted-on coating has no beta-amylase in it at all, so nothing is eating it. The bag arrives with the enzyme stopped and the scaffold already fitted. It is worth setting that against the frozen wings on this site, where the honest answer runs the other way: a frozen wing cannot be dried or coated, so the baking powder that makes that page work has nothing to act on, and the advice is don't. Same question, opposite answer, and the difference is simply whether the factory step helps the mechanism or removes it. Here it helps. No, and it will actively make them worse. The cornstarch in this recipe is doing one job: replacing the starch a fresh sweet potato does not have enough of, so there is something on the surface that can set into a crust. A frozen fry already carries a starch coating applied at the factory, so you would be adding a second scaffold on top of one that is already there. It also cannot work mechanically. Starch only sets into anything if it gelatinizes, and gelatinizing needs water and heat together - on a fresh fry the cornstarch has damp, just-cut potato to hydrate against, which is why the prep step tosses it on before the oil. A frozen fry's surface is dry, sealed by par-frying and below freezing, so dry starch has nothing to take up water from. Most of it is simply blown off by the fan, and whatever clings stays raw and reads chalky. If the fries are coming out limp, the fix is the basket rather than the coating: crowd them and they steam, because the water leaving a full basket has nowhere to go.
