Sweet potato fries used to defeat me in the oven - always floppy. The air fryer gets them so much closer to crisp, and a light dusting of cornstarch before they go in really helps them firm up. It took me a couple of tries to get the knack.
How to air fry sweet potato fries
- Preheat your air fryer to 375°F (190°C).
- Add the fresh sweet potato fries to the basket. Keep them in a single layer.
- Cook for about 15 minutes, flipping or shaking halfway through.

Cut uniformly so they cook evenly.
How to tell when it's done
I pull them when the edges are caramelized and crisp but before they go too dark, because they soften as they cool. They do like to stick, so it's single layer and plenty of shaking.
